Yoshi Egg Cupcakes - April 2012

I made these Yoshi egg cupcakes for my son, Caleb, to take to school and celebrate his 10th birthday with his class.

To make these I started by baking some Funfetti cupcakes.  As they were cooling I squeezed the sides a little to see if it would make them have more of an egg/oval shape rather than just a circle.  It worked on some of them and didn't work as well on others.  Some of them baked a little unevenly and looked more oval all on their own.  :)  After the cupcakes cooled completely I used vanilla buttercream to ice the cupcakes.  I tried to spread the icing in a way to help give more of an egg shape also.  Then I used some jumbo round sprinkles to make the spots for the eggs.  Caleb picked green, yellow, and blue since we didn't have enough to just do green.

Caleb liked them and enjoyed getting to share them with his class.  :)

I made this heart shaped chocolate chip cookie cake and some heart shaped mini cookie cakes for my family and me to enjoy for Valentine's Day.

A cute alternative, and not quite as Valentine-y looking.

Valentine's Day Heart Shaped Cookie Cake & Mini Cake
To make these cookie cakes I just followed the directions for the cookie cake recipe on the back of a package of chocolate chips.  I baked the large cookie cake in a heart shaped spring-form brownie pan, and I baked the mini cookie cake in some heart shaped silicone cupcake molds.

After the cookie cakes were baked and completely cooled I flipped them over so I could use the smooth flat surfaces to decorate on.  I used white buttercream icing to decorate them.  For the large cookie cake I first put the ruffle on the outer edge of the cookie cake using a star tip.  I used a large heart cookie cutter to make a shallow indentation in the middle of the cookie cake.  Then I used a round tip to pipe my lattice lines.  Next I made the inner ruffle on the heart indentation.  After that I made my loop ruffles off the inner ruffle and on the sides of the cookie cake off of the outer ruffle.  If I was doing this over again I would've done the loop ruffles first and then the border ruffles so it would look a little cleaner.  The border ruffles would've covered the ends of my loops if I'd done it that way, but I was making it up as I went along so that's the way it went.  :)

For the mini cookie cakes I used a round tip to make the lattice pattern, the dots, the cornelli lace pattern, the circles, and the lace pattern.  Then I used the star tip to make the ruffles on the edges of them.

My family liked the Valentine's Day treat, and we all enjoyed eating them.  Yummy!  :)
